currently, the best way to go is to read the module docs, as most of the tutorials and other docs are outdated.
also, you find some general information here: http://www.flatface.net/~namaide/lsdocs/
there're some smaller tutorials, look through the sticky threads to find them.
concerning what you want to do (or at least the way i understand it): there's no way litestep can prevent a user from running apps. that's not part of a shell. but you can probably set up a windows user account for this.
