is there a way to keep the popup [2nd or 3rd ... level] open for a short time even if you are not hovering the parent entry anymore - somewhat like the explorer menus so that you are not forced to go straight to the right to not lose your popup?

something like PopupMenuClosingDelay

or another module that can do that?

If you use popup2 2.1.6 or later you can pin it. To dismiss it you'd need a timer triggered by a hotspot or something like that.
